Whole grain apple waffles


One of my favorite basketball players, Sarunas Jasikevicius, provided his recipe for Whole Grain Apple Waffles to a fitness website I frequent. They're delicious. Eat up and enjoy:

SERVES
6

INGREDIENTS
1/4 cup cornmeal
1/4 cup buckwheat flour
1/2 cup brown rice flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp Splenda (may need to adjust this to desired sweetness)
1/2 cup fat-free plain yogurt
2 eggs
2 Tbsp water
1 Tbsp canola oil
1 tsp vanilla extract
1 cup diced red apple (Gala works well)

INSTRUCTIONS
Preheat waffle iron.

In a large bowl, combine all dry ingredients, up to and including Splenda. In another bowl, whisk together the yogurt, eggs, water, oil and vanilla. Add this to dry ingredients.

Stir in apples.

Use approximately 1/3 cup batter for each waffle. It may be necessary to thin the batter a bit with a little more water.
